Irish Soup Recipes

I have found that when the visitors I have had come to Ireland, they always ask me for some of my Irish soup recipes. In particular, they seem very interested in traditional Irish soup recipes. In my opinion, there are three very traditional soups that are well known and popular in Ireland. These are:

  • Irish Vegetable Soup Recipes
  • Irish Chicken Soup Recipes

As any society develops so does its food culture, but not everything should change in my opinion, and these soups are in that range for me. The onslaught of cooking shows on TV has almost forced chefs to find their own twist on even a simple soup. Frequently these days cream is added and mixed with cream and then drizzled on top for added effect, and sprinkling heavily with parsley seems to be standard. I like the taste and I like natural traditional flavors so I haven’t added anything fancy to these traditional Irish soup recipes so I hope you give them a try and enjoy the healthy taste.

irish potato soup

Ingredients

5 large potatoes, 2 pints of vegetable broth, 1 onion, 1 turnip, 1 carrot, 2 celery sticks

1/2 pint of milk (or cream) 1 ounce of butter, 1 tablespoon of tapioca.

How to cook

Clean and peel the potatoes and then cut them into thin slices. Melt the butter in the saucepan and add the potatoes and cook for 5 minutes. Add the vegetable broth and bring to a boil.

Dice the onion, turnip, carrot and celery and add along with the salt and pepper. Cook for another 30 minutes.

Blend soup and return to saucepan. Add the tapioca and return to the heat for about 15 minutes. Add the cream and stir slowly. You should now have a very tasty Irish Potato Soup.

Irish Vegetable Soup

Ingredients

4 pints vegetable broth, 2 onions, 1 carrot, 1 parsnip, 2 celery sticks, 1/2 pound barley, 2 pounds dry peas, 1 small turnip, salt and pepper for seasoning

How to cook

Dice all vegetables. Put the broth in a saucepan and bring to a boil then add the vegetables, cook the vegetables until softened and add salt and pepper to taste.

You can sprinkle with chopped parsley or chopped thyme for flair.

Ingredients

1 chicken carcass

1 medium onion

1 pint/600ml of milk

1 chicken bouillon cube

4 tablespoons boiling water

4 tablespoons of cold water

1 tablespoon of cornmeal

A pinch of nutmeg

100g/4ox chopped chicken

1 bay leaf

1 tooth

cooking method

Break the carcass and put it in the saucepan and then put a bay leaf and a clove. Chop an onion and add this. Dissolve a bouillon cube with boiling water in a small pot and add it and simmer for 20 minutes.

Strain and return to the saucepan. Then mix the cornmeal with cold water to make a smooth paste and add to the saucepan. Bring to a boil and it should have thickened by now. Finally add the nutmeg and minced chicken and simmer for about 30 minutes with the lid on. Finally add salt and pepper to taste.
